- 3/4 cups Apple Juice
- 13 cups Dried Cranberries Or Cherries; Coarsely Chopped If Large
- 1/2 whole Small Butternut Squash; Peeled And Chopped Into 1/3- To 1/2-inch Pieces; 1 To 1 1/2 Cups
- 2 teaspoons Olive Oil
- 1 whole Large Apple; Peeled, Cored, And Chopped Into 1/3- To 1/2-inch Pieces; 1 To 1 1/2 Cups
- 1 Tablespoon Butter
- 1 whole Small Onion, Finely Chopped
- 1 stalk Celery Finely Chopped
- 1 clove Garlic, Minced
- 1/2 teaspoons Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1 teaspoon Dried Sage
- 1 teaspoon Dried Rosemary
- 1/2 teaspoons Dried Thyme
- 1/4 teaspoons Dried Marjoram
- 2 cups Chicken Or Vegetable Broth
- 1 cup Quinoa, Triple Rinsed If Not Prewashed
- 1/4 cups Toasted Chopped Pecans
- 4 Tablespoons Chopped Fresh Parsley
Directions

1Heat oven to 400 F.

2In a small sauce pan, bring apple juice to a simmer.

3Add dried cranberries or cherries.

4Remove from heat and allow fruit to hydrate while preparing remaining ingredients.

5Toss the butternut squash with the olive oil and season with salt and pepper.

6Spread squash on a baking sheet and roast for 15 minutes, stirring once.

7After 15 minutes, add chopped apples to the baking sheet, roast an additional 15 minutes.

8Remove from the oven and allow to cool on the baking sheet.

9Reduce oven temperature to 350 F.

10While squash roasts, prepare quinoa.

11Heat butter in a saucepan over medium heat; add onions and celery, saute 3 minutes.

12Add garlic, salt, pepper, and all dried herbs; saute 2 minutes more.

13Add broth and bring to a boil; add quinoa and return to a boil.

14Reduce heat, cover, and simmer until quinoa is tender, about 20 minutes.

15Add dried cranberries and any unabsorbed juice.

16If quinoa is soupy at this point, simmer, uncovered, until thickened (it should be similar in consistency to a thin oatmeal.)

17Add roasted squash and apples to the thickened quiona mixture.

18Spread in a buttered 9x9-inch baking dish.

19Bake at 350F for 30 minutes or until brown.

20Garnish with toasted pecans and fresh chopped parsley.
