  • 2 c. water
  • 2 medium tomatoes, cut into 1/2-inch cubes
  • 6 green onions with tops, finely chopped
  • 1 medium cucumber, cut into 1/2-inch cubes
  • 1 small green bell pepper, seeded and cut into 1/2-inch cubes
  • 1 c. finely chopped fresh parsley
  • 1/2 c. finely chopped fresh mint
  • 1/3 c. freshly squeezed lemon juice
  • 1/3 c. olive oil
  • 1 garlic clove, minced
  • 1 tsp. fine sea salt
  • 1/8 tsp. cayenne pepper
