- 2 medium tomatoes, cut into 1/2-inch cubes
- 6 green onions with tops, finely chopped
- 1 medium cucumber, cut into 1/2-inch cubes
- 1 small green bell pepper, seeded and cut into 1/2-inch cubes
- 1 c. finely chopped fresh parsley
- 1/2 c. finely chopped fresh mint
- 1/3 c. freshly squeezed lemon juice
- 1/3 c. olive oil
- 1 garlic clove, minced
- 1 tsp. fine sea salt
- 1/8 tsp. cayenne pepper
