Ingredients

  • 2 large rabbits
  • 1 carrot, sliced
  • 2 shallots, chopped
  • 4 Tbsp. mixed herbs
  • 1 c. dry white wine
  • vodka or gin warmed (optional)
  • 2 wide strips pork fat
  • 2 mandarins, sliced, peel and fruit
  • 2 bay leaves
  • 2 Tbsp. minced chives
  • 1 c. mandarin juice

Directions

    Wrap rabbit in strips of pork fat and put in roasting pan with carrot, mandarin slices, chopped shallots, herbs and white wine. Roast in 350° oven for 1 1/2 hours.

    After cooking 30 minutes, add mandarin juice.

    Remove rabbit, discard pork fat, strain sauce, pour over rabbit.

    Flame with vodka or gin.

    Serves 6 to 8.
