- 1/3 c. butter or oleo
- 1 (2 to 2 1/2 lb.) rabbit or 1 (2 1/2 to 3 lb.) fryer chicken
- 1 1/4 c. chopped onion
- 1 c. chopped carrots
- 1/3 c. chopped walnuts
- 2 to 2 1/2 oz. jars whole mushrooms, drained
- 2 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. apple juice or cider
Directions

1In a large skillet, melt butter.

2Cook rabbit or chicken pieces until browned on all sides.

3Transfer meat to a 3-quart casserole dish, reserving drippings in skillet.

4Add the onion, carrot and walnuts to drippings.

5Cook until vegetables are tender, but not brown.

6Stir in mushrooms.

7Spoon vegetables and nuts over meat in the casserole dish, reserving drippings in skillet.

8Blend flour, salt and pepper into drippings.

9Add apple juice, all at once.

10Cook and stir until thick and bubbly.

11Cook and stir 1 minute more.

12Pour over meat and vegetables.

13Bake, uncovered, in a 350° oven for 1 hour or until meat is done. Serves 4 to 6 people.
