Rabbit-Cider Casserole

  • 1/3 c. butter or oleo
  • 1 (2 to 2 1/2 lb.) rabbit or 1 (2 1/2 to 3 lb.) fryer chicken
  • 1 1/4 c. chopped onion
  • 1 c. chopped carrots
  • 1/3 c. chopped walnuts
  • 2 to 2 1/2 oz. jars whole mushrooms, drained
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. apple juice or cider

    In a large skillet, melt butter.

    Cook rabbit or chicken pieces until browned on all sides.

    Transfer meat to a 3-quart casserole dish, reserving drippings in skillet.

    Add the onion, carrot and walnuts to drippings.

    Cook until vegetables are tender, but not brown.

    Stir in mushrooms.

    Spoon vegetables and nuts over meat in the casserole dish, reserving drippings in skillet.

    Blend flour, salt and pepper into drippings.

    Add apple juice, all at once.

    Cook and stir until thick and bubbly.

    Cook and stir 1 minute more.

    Pour over meat and vegetables.

    Bake, uncovered, in a 350° oven for 1 hour or until meat is done. Serves 4 to 6 people.
