- 4 Tbsp. butter
- 3 lb. rabbit, cut into bite size pieces
- 2 onions, chopped
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. sugar
- 1/2 tsp. rosemary
- 1 c. water
- 2 c. red wine
- juice and grated rind of 1 lemon
Directions

1Assemble and prepare all ingredients. In 6-quart pot melt butter and brown rabbit.

2Add onions and cook until translucent. Sprinkle flour over rabbit, stirring.

3Add all seasonings; mix. Combine water, wine, lemon juice and rind.

4Pour over rabbit. Bring to boil, reduce heat and simmer covered for 1 hour.
