Radish Salad

Ingredients

  • 1 lb. radishes
  • 1 Tbsp. salt
  • 3 Tbsp. wine vinegar
  • 1/4 c. oil
  • 3 Tbsp. chopped parsley
  • 3 Tbsp. capers
  • 8 oz. Edam cheese

Directions

    Clean radishes, then slice very thinly.

    Put in a bowl and sprinkle with salt.

    Cover and leave for 10 minutes, then pour off liquid from bowl.

    Rinse and pat dry with paper towels.

    Mix together vinegar, oil, parsley and capers.

    Add the radishes and toss well together.

    Cut the cheese into thin strips and stir into the salad.

    Chill for 20 minutes before serving with Melba toast. Serves 4.
