Ingredients
- 1 lb. radishes
- 1 Tbsp. salt
- 3 Tbsp. wine vinegar
- 1/4 c. oil
- 3 Tbsp. chopped parsley
- 3 Tbsp. capers
- 8 oz. Edam cheese
Directions

1Clean radishes, then slice very thinly.

2Put in a bowl and sprinkle with salt.

3Cover and leave for 10 minutes, then pour off liquid from bowl.

4Rinse and pat dry with paper towels.

5Mix together vinegar, oil, parsley and capers.

6Add the radishes and toss well together.

7Cut the cheese into thin strips and stir into the salad.

8Chill for 20 minutes before serving with Melba toast. Serves 4.
