  • 2 (7 oz.) jars baby corn-on-the-cob
  • 1 (12 oz.) jar whole baby carrots, drained
  • 2 (4.5 oz.) jars whole mushrooms, drained
  • 1 1/3 c. cider vinegar
  • 2/3 c. vegetable oil
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 c. green peppers, diced
  • 1 c. purple onion, diced
  • lettuce leaves

Directions

    Place each of the first 3 ingredients separately into zip-top plastic bags; set aside.

    Combine vinegar and next 6 ingredients until sugar dissolves.

    Pour marinade equally over vegetables in plastic bags; seal securely and refrigerate 8 hours.
