- 2 (4.5 oz.) jars whole mushrooms, drained
- 1 1/3 c. cider vinegar
- 2/3 c. vegetable oil
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. green peppers, diced
- 1 c. purple onion, diced
- lettuce leaves
Directions

1Place each of the first 3 ingredients separately into zip-top plastic bags; set aside.

2Combine vinegar and next 6 ingredients until sugar dissolves.

3Pour marinade equally over vegetables in plastic bags; seal securely and refrigerate 8 hours.
