  • 1 1/2 cup raisins
  • 2 tbsp. shortening
  • 1 3/4 cup water
  • 1 cup granulated sugar
  • 1 1/2 tsp. vanilla
  • 3 2/3 cup sifted flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 egg

Directions

    Cook raisins in the water for 7 minutes. Let cool.

    Cream together shortening and sugar.

    Blend in egg and vanilla.

    Add raisins and liquid, mix well.

    Sift together flour, baking soda and salt.

    Add to creamed mixture.

    Grease loaf pan.

    Fill 3/4 full.

    Bake at 350 degrees for approximately 1 hour and 10 minutes.

    Cool for 5 minutes and remove to wire rack to continue cooling.
