- 3 34 cups all-purpose flour
- 3 12 teaspoons baking powder
- 14 cup sugar
- 1 12 teaspoons salt
- 1 14 cups fat-free evaporated milk
- 13 cup margarine
- 2 large eggs
- 2 teaspoons orange peel, grated (zest)
- 12 cup raisins
Directions

1Preheat the oven to 350F Prepare a 9x5-inch loaf pan with nonstick pan spray.

2Sift the flour, baking powder, sugar and salt into a large bowl.

3Mix the milk, margarine, eggs and orange zest in a medium bowl.

4Add to the dry ingredients.

5Mix until just blended, stir in the raisins.

6Pour into the prepared pan and bake for 1 hour and 15 minutes.

7Cool on a wire rack at room temperature at least 1 hour and 30 minutes before slicing into 18 slices.
