  • 3 34 cups all-purpose flour
  • 3 12 teaspoons baking powder
  • 14 cup sugar
  • 1 12 teaspoons salt
  • 1 14 cups fat-free evaporated milk
  • 13 cup margarine
  • 2 large eggs
  • 2 teaspoons orange peel, grated (zest)
  • 12 cup raisins

Directions

    Preheat the oven to 350F Prepare a 9x5-inch loaf pan with nonstick pan spray.

    Sift the flour, baking powder, sugar and salt into a large bowl.

    Mix the milk, margarine, eggs and orange zest in a medium bowl.

    Add to the dry ingredients.

    Mix until just blended, stir in the raisins.

    Pour into the prepared pan and bake for 1 hour and 15 minutes.

    Cool on a wire rack at room temperature at least 1 hour and 30 minutes before slicing into 18 slices.
