Ingredients

  • 1 c. sugar
  • 3/4 c. shortening
  • 2 c. flour
  • 1/2 tsp. baking powder
  • 1 c. raisins
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 1/2 tsp. almond extract
  • 1 tsp. soda
  • 1 c. raisin water
  • 2 eggs
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt

Directions

    Boil raisins in 2 cups water for 20 minutes; set aside to cool.

    Sift dry ingredients, except sugar.

    Mix sugar and shortening.

    Add beaten eggs and extracts.

    Drain raisin water; add enough water to make 1 cup.

    Add alternately with dry ingredients.

    Bake in a 350° oven for approximately 20 minutes.
