- 1 c. white corn syrup
- 3 large eggs, lightly beaten
- 1/2 c. sugar
- 2 Tbsp. butter
- 1/4 tsp. salt
- 1/4 tsp. grated lemon rind
- 3/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1 c. raisins, plumped
- 1/4 c. chopped pecans or walnuts
- unbaked 9-inch pie shell, chilled
Directions

1Preheat oven to 425°.

2Combine syrup, eggs, sugar, butter, salt, lemon rind, allspice and nutmeg.

3Mix well.

4Add raisins and nuts.

5Pour into pie shell.

6Bake 10 minutes.

7Reduce heat to 350° and bake 30 to 35 minutes longer.

8Filling solidifies further on cooling.

9Serves 6 to 8.
