- 1 1/2 c. seedless raisins
- 1 Tbsp. flour
- 1/2 c. sugar
- grated rind of 1 lemon
- 1 Tbsp. lemon juice
- 1 c. chopped walnuts
- plain pastry
Directions

1Cook raisins in 1 1/2 cups boiling water until tender; mix and sift flour and sugar and add slowly to raisins, stirring until thickened.

2Add lemon rind and juice and nuts.

3Cool; line pie pan with pastry.

4Turn in mixture.

5Top with a layer of pastry.

6Wet edges of pastry.

7Press together and trim.
-
8Gash top to let steam escape.

9Bake at 425° for 10 minutes.

10Reduce heat and bake 20 minutes longer at 325°.

11Can omit grated rind of lemon and omit nuts.

12I like to add 1/2 teaspoon of cinnamon.
