- 2 c. seedless raisins
- 2 c. boiling water
- 1/2 c. sugar
- 2 Tbsp. flour
- 1/2 c. chopped nuts
- 2 tsp. grated lemon rind
- 3 Tbsp. lemon juice
- 2 pie shells
Directions

1Cook raisins in boiling water for 5 minutes or until tender. Stir in sugar and flour.

2Cook over medium heat, stirring constantly until boiling.

3Boil for 1 minute.

4Remove from heat. Stir in nuts, lemon rind and lemon juice.

5Pour into unbaked pie shell and cover with a top crust which has slots cut in it.

6Bake until brown at 425° for 30 to 45 minutes.

7Serve warm.
