Raisin-Rice Pudding

  • 2 c. cooked, rinsed and drained rice
  • 2 c. milk
  • 1/3 c. brown sugar
  • 1 Tbsp. margarine
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 eggs
  • 1 c. raisins

    Combine and beat well all except rice and raisins, then add both.

    Pour into buttered or sprayed casserole.

    Set in larger pan; measure about 3/4 inch boiling water into pan.

    Bake at 325° for 1 1/2 hours or until set.

    Serve hot or cold, plain or with cream or fruit.
