  • 2 c. cornmeal (stone-ground)
  • 1 c. sugar
  • 1 tsp. salt
  • 2 c. buttermilk
  • 1 lb. sausage, fried and broken in small pieces (use grease)
  • 1 1/2 c. self-rising flour
  • 1 tsp. baking powder
  • 5 eggs
  • 2 c. chopped ramps (fresh or frozen)

    Mix dry ingredients. Beat eggs and milk together. Add remaining ingredients and mix well. Bake in a greased 10-inch iron skillet in preheated oven at 400° for about 40 minutes.
