Ranch Potatoes

  • 6 to 8 medium size potatoes, cooked and quartered
  • 1/2 c. sour cream
  • 1/2 c. Ranch dressing
  • 1/4 c. bacon bits
  • 2 Tbsp. parsley
  • 1 c. shredded Cheddar
  • 1/4 c. margarine
  • 1 to 2 c. crushed corn flakes

Directions

    Place potatoes in oven-safe casserole dish.

    In small mixing bowl, add sour cream, Ranch dressing, bacon bits, parsley and 1/4 to 1/2 cup cheese.

    Mix well.

    Pour sour cream mixture over potatoes.

    In small saucepan, melt butter.

    Add corn flakes and mix until well coated with butter.

    Sprinkle corn flakes and remaining cheese over potato mixture. Bake in a 350° oven for approximately 30 minutes.
