Ranch Style Wings

  • 2 lbs chicken wings, split at joint and tips removed
  • 3 ounces ranch dressing mix
  • 1 12 cups all-purpose flour
  • pepper
  • 3 eggs
  • vegetable oil, for frying
  • 14 cup hot sauce
  • 14 cup honey

    In large bowl toss the wings with 1 ounce of the ranch dressing mix.

    Cover and refrigerate at least one hour and up to 4 hours.

    In a large bowl whisk the flour, 1 tsp pepper and 1 ounce ranch dressing mix.

    In another bowl, whisk eggs, 2 tbsp water and the remaining ranch dressing mix.

    Dredge the wings, a few at a time in the seasoned flour, then dip into the egg mixture and return to the flour mixture, turning to coat.

    Transfer to a rack.

    Heat 1/2 vegetable oil in a medium cast-iron skillet over medium heat until a deep-fry thermometer registers 350 degrees.

    Fry the wings in batches until golden brown, 5 to 6 minutes per side.

    Remove with a slotted spoon and drain on paper towels.

    Whisk hot sauce and honey in a bowl and serve with wings.
