- 3 medium tomatoes, quartered
- 2 jalapeno peppers, halved and seeded
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon vegetable oil
- 1/4 teaspoon ground cumin
Directions

1Preheat broiler. (500°).

2Place tomato quarters and pepper halves, cut side down, on broiler pan.

3Broil 4 inches from the heat for 5-7 minutes, 'til skins start to blacken.

4Remove from broiler pan; cool.

5Remove skins from tomatoes and peppers; finely chop.

6Cook onion and garlic in hot oil, in a small saucepan for 3 minutes.

7Stir in tomatoes, peppers and cumin. Bring to a boil.

8Reduce heat and simmer, uncovered, for 10 - 15 minutes or 'til most of the liquid has evaporated.

9Cool completely.
