Ingredients

  • 1/2 qt. homemade chicken stock (the most important ingredient)
  • 4 oz. raw beef (sirloin
  • fillet), cut in very thin strips
  • 3-1/2 oz. rice noodles
  • 1 handful coriander (cilantro)
  • 2 cloves garlic, chopped
  • 1 piece ginger, chopped
  • 2 chillis, chopped
  • 3 shallots, chopped
  • 2 tbsp. nam pla
  • 1 stalk lemon grass, chopped
  • 1 tbsp. sake
  • 1 tbsp. lime juice

Directions

    Quickly boil the noodles in boiling salted water; drain and add a small heap to a bowl.

    Place meat strips on top.

    Sweat off the aromatic vegetables in a separate pan for 2 minutes; add the chicken stock.

    Allow to simmer for 5 minutes.

    Add sake, nam pla, lime juice and season to taste.

    Add a lot of chopped fresh coriander and pour gently over the noodles and meat.

    The heat in the stock will instantly cook the beef.

    Serve with a little more chopped coriander.
