  • 1/2 cups Butter, Softened
  • 1 cup Granulated Sugar
  • 3 whole Eggs
  • 1 cup All-purpose Flour
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Baking Powder
  • 2-1/2 cups Fresh Raspberries
  • Confectioners Sugar, For Dusting
  • Vanilla Ice Cream Or Whipped Cream, To Serve

Directions

    Preheat oven to 350°F. Butter a 2-quart baking dish.

    In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, beating well after each addition.

    In a separate bowl, combine the flour, salt and baking powder. Gradually add the dry mix to the wet and gently stir until just incorporated.

    Spread the batter in the baking dish. Scatter the berries on top.

    Bake for 45-50 minutes or until a toothpick comes out clean. Dust with the confectioner's sugar and serve with vanilla ice cream or whipped cream!
