Raspberry-Chocolate Bars

  • 2 1/2 c. flour
  • 1 c. sugar
  • 3/4 c. finely chopped pecans
  • 1 c. butter, softened
  • 1 egg
  • 1 (12 oz.) jar seedless red raspberry jam
  • 1 2/3 c. semi-sweet mini chocolate chips

Directions

    Preheat oven to 350°.

    In a large bowl, combine flour, sugar, pecans, butter and egg; stir until crumbly.

    Set aside 1 1/2 cups of this pecan mixture.

    Press the remaining mixture into the bottom of a greased 13 x 9 x 2-inch baking pan.

    Spread the raspberry jam over all.

    Sprinkle with chocolate chips, then top with the remaining crumb mixture.

    Bake 40 to 45 minutes or until lightly browned.

    Cool completely in pan on wire rack; cut into bars.

    Yield: 3 dozen bars.
