- 1/2 cup melted butter
- 2/3 cup caster sugar
- 1 egg
- 1/2 cup plain flour
- 1/2 cup self raising flour
- 1/4 cup buttermilk
- 1 cup raspberry jam
- 2 eggs
- 1 tbsp caster sugar
- 1/4 cup shredded coconut
- 1/4 cup dessicated coconut
Directions

1Preheat oven to 180c

2In a bowl, add melted butter and caster sugar.

3Mix together well with a wire whisk

4Add the egg and whisk well

5Add flours, stir and combine with a spatula

6Add buttermilk and mix well

7Line a square cake tin with a baking paper and pour batter in.

8Spread it around nicely

9Spread over the raspberry jam

10For 3rd layer

11Into a bowl, add eggs, sugar and coconuts, mix well

12Spread it over the raspberry and smooth out

13Sprinkle some more coconut on top and bake for 30-35mins

14Cool, slice and enjoy.
