Raspberry Donuts

Ingredients

  • pizza dough homemade or bought from store
  • vegetable oil
  • 1 pint raspberries
  • 1 1/2 cups powdered sugar sifted

Directions

  1. 1
In a large pot for frying, add enough vegetable oil so the oil is about 2 inches up from the bottom of the pan. Heat should be about medium.
  2. 2
In the meantime, roll out your pizza dough to about 1/2 inch thick. Make sure there is enough flour on your board so the dough doesn't stick.
  3. 3
Using a round cookie cutter and an apple corer/something else small and round, cut out your donuts.
  4. 4
Gather the scraps and re-roll to make more donuts. I don't' have a candy thermometer, so I can't tell you the temperature, but you'll know that the temperature of your oil is at the right temperature when you add a piece of the dough and it immediately bubbles up to the top.
  5. 5
Once the oil is at the proper temperature, drop in your donuts and cook on each side for about 30-40 seconds.
  6. 6
Drain onto a plate lined with paper towels.
  7. 7
In a small bowl, macerate about 1/2 a handful of raspberries with either your hands or a fork.
  8. 8
Add 1 cupd of sifted powdered sugar and mix vigorously until you create a glaze/frosting.
  9. 9
Add more powdered sugar to get a relatively thick glaze/loose frosting texture.
  10. 10
Dip the donuts into the glaze/frosting.
  11. 11
Let set for a few minutes and then eat!
