- 1 c. flour
- 1/2 c. butter
- 2 Tbsp. sugar
- 1/4 c. ground almonds
- 1 egg yolk
- 1/2 tsp. almond extract
- raspberry jam
- 3 Tbsp. chopped, toasted almonds
Directions

1With pastry blender, cut butter into flour until mixture is like coarse meal.

2Mix in sugar, ground almonds, egg yolk and almond extract.

3Blend to a stiff paste, using hands if necessary. Press half of the mixture in a 9-inch square pan.

4Spread with jam.

5Roll out remaining dough (chill first if necessary) to a 9-inch square.

6Arrange carefully and evenly over the jam. Sprinkle with chopped almonds.

7Bake in 350° oven for 15 minutes. While still warm and in pan, cut into fingers.
