  • 1 c. flour
  • 1/2 c. butter
  • 2 Tbsp. sugar
  • 1/4 c. ground almonds
  • 1 egg yolk
  • 1/2 tsp. almond extract
  • raspberry jam
  • 3 Tbsp. chopped, toasted almonds

Directions

    With pastry blender, cut butter into flour until mixture is like coarse meal.

    Mix in sugar, ground almonds, egg yolk and almond extract.

    Blend to a stiff paste, using hands if necessary. Press half of the mixture in a 9-inch square pan.

    Spread with jam.

    Roll out remaining dough (chill first if necessary) to a 9-inch square.

    Arrange carefully and evenly over the jam. Sprinkle with chopped almonds.

    Bake in 350° oven for 15 minutes. While still warm and in pan, cut into fingers.
