- Mint-Infused Honey Syrup
- 1/2 cup honey
- 1/2 cup water
- 3-5 sprigs of fresh mint
- Mojito
- 1 cup raspberries
- 2 tablespoons water
- 2 shots mint-infused honey syrup
- 3 shots light rum
- 2 shots fresh lime juice
- sparkling mineral water
- ice cubes
Directions

1Combine the honey and water in a saucepan over low heat until the honey dissolves.

2Remove from the heat, add the mint springs, and allow to rest for 1 hour.

3Remove the mint sprigs. The syrup will keep in a sealed container in the refrigerator for a few weeks.

4Puree the raspberries and water with an immersion blender.

5Put the mixture through a mesh strainer to remove the seeds.

6Add the syrup, rum, and lime juice.

7Divide between 2 glasses, add ice, and top off with sparkling water. Garnish with lime wedges, raspberries, and mint leaves if desired.
