- 1 Tbsp. baking powder
- 2 eggs, slightly beaten
- 1/2 c. vegetable oil
- 1 1/2 c. fresh or frozen raspberries
- 1 c. sugar
- 1/2 tsp. salt
- 1 c. light cream
- 1 tsp. lemon extract
Directions

1Combine eggs, cream, oil and lemon extract.

2Stir in dry ingredients until moistened.

3Pour in lined muffin cups.

4Bake at 400° for 18 to 20 minutes.
