Raspberry-Pineapple Mold

  • 3 (3-ounce) packages raspberry-flavored gelatin
  • 3 3/4 cups boiling water
  • 1 (15 1/4-ounce) can crushed pineapple, undrained
  • 2 (10-ounce) packages frozen raspberries, thawed and drained
  • 3 bananas, diced
  • 1 cup chopped pecans
  • Lettuce leaves (optional)
  • Mayonnaise (optional)

Directions

    Dissolve gelatin in boiling water. Add pineapple to gelatin mixture, stirring well. Chill until mixture is consistency of unbeaten egg white.

    Combine next 3 ingredients; fold into gelatin. Pour into a lightly oiled 9-cup ring mold; chill until firm. Unmold on lettuce leaves, and garnish with a dollop of mayonnaise, if desired.
