Raspberry Salad

  • 1 (3 oz.) pkg. raspberry gelatin
  • 24 large marshmallows
  • 4 oz. cream cheese
  • 1 (No. 2) can crushed pineapple, drained
  • 1 c. pecans, chopped
  • 1/2 pt. cream, whipped

Directions

    In double boiler, place 2 cups water; add marshmallows to water.

    After marshmallows have melted, remove from burner and add gelatin.

    Dissolve gelatin and cool mixture until it is congealed slightly.

    Soften the cream cheese with some of the pineapple juice.

    Add pineapple and nuts.

    Whip gelatin mixture.

    Add pineapple-cheese mixture to gelatin and then fold in whipped cream.

    Chill.
