- 2 cups almond flour
- 4 tablespoons melted butter
- 1/2 cup sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 2 cups raspberries (fresh or frozen)
- 1 teaspoon pure vanilla extract
- 3 tablespoons maple syrup
- 2 teaspoons lemon zest
- 1/4 cup finely chopped walnuts
- 1/4 cup almond flour
- 3 tablespoons brown sugar
- 3 tablespoons melted butter
Directions

1Make the Crust Preheat the oven to 350 degrees .

2In a food processor, pulse the almond flour, melted butter, sugar, salt and baking powder until incorporated but still coarse.

3Make the Crust Line a nonstick 9-by-9-inch baking pan with parchment paper, leaving at least 1 inch overlapping the sides (for removal later).

4Press the crust into the pan and bake for 10 minutes.

5Make the Filling In a small saucepan, combine the raspberries, vanilla extract, syrup and lemon zest and bring to a boil.

6Remove from heat and set aside.

7Remove the partially baked crust from oven and let it cool for 10 minutes.

8Meanwhile, Make the Streusel Combine the walnuts, almond flour, brown sugar and butter in a bowl and set aside.

9Meanwhile, Make the Streusel Once the crust has cooled, spread with the raspberry filling and sprinkle with the streusel topping.

10Bake for 20 minutes, or until the topping turns golden brown.

11Remove from the oven and allow to cool for 30 minutes.

12Use the overlapping parchment paper to carefully remove from the pan.

13Slice the bars into squares and serve.
