- 3 medium zucchini
- 1 medium eggplant (about 1 lb.)
- 1/2 c. salad or olive oil
- 1 c. thinly sliced onion
- 2 cloves garlic, crushed
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 medium tomatoes, peeled and cut in wedges
- 2 Tbsp. chopped parsley
Directions

1Wash peppers and halve.

2Remove ribs and seeds.

3Cut lengthwise into 1/4-inch thick slices.

4Scrub zucchini and cut crosswise into 1/2-inch thick slices. Wash eggplant.

5Cut lengthwise into quarters, then into 1/4-inch slices.
