- 2 tomatoes, cut in wedges
- 1/2 tsp. thyme
- 1 onion, sliced
- 1 green pepper, cut in strips
- 2 c. eggplant, peeled, sliced and cut in strips
- 2 cloves garlic, crushed
- 2 c. zucchini, sliced and cut in strips
- black pepper to taste
- 1 bay leaf
- 1/4 c. Parmesan cheese, grated
Directions

1Sprinkle tomatoes with thyme.

2Let stand. Saute remaining vegetables and garlic until barely tender. Add bay leaf.

3Pour into nonstick casserole. Arrange tomato wedges on top.

4Sprinkle with cheese and black pepper. Bake at 350°, covered, 30 minutes. Remove bay leaf before serving. Serves 8. Contains 48 calories per serving and 1 gram fat.
