- 1 medium green bell pepper, chopped (about 1 c.)
- 1 onion, finely chopped
- 2 tomatoes, each cut into fourths
- 1/4 c. olive or vegetable oil
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 clove garlic, crushed

3Cook all ingredients in 12-inch skillet over medium heat for 10 to 15 minutes, stirring occasionally, until zucchini is tender.
