- 1 medium onion, chopped
- 2 green peppers, chopped
- 5 cloves garlic, chopped
- 2 medium eggplants
- 4 medium zucchini
- 1 can tomatoes
- 2 Tbsp. basil
- 2 Tbsp. sugar
- 1 bay leaf
- handful of fresh parsley
Directions

1Saute the onion, peppers and garlic in olive oil.

2Peel and dice eggplants.

3Salt the eggplant and let it stand.

4Peel and dice zucchini.

5Wash and drain the eggplant.

6Add to the sauteed mixture, then add zucchini, tomatoes, basil and sugar.

7Season with salt to taste.

8Stir and simmer.

9Add parsley and bay leaf.
