  • 2 medium onions, diced
  • 4 ribs celery, diced
  • 1 c. fresh mushrooms or 8 oz. can stems and pieces, drained
  • 2 cloves garlic, diced
  • 2 small zucchini, sliced 1/2-inch thick (unpeeled)
  • 3 tomatoes, diced
  • 1 small eggplant, peeled and diced
  • 1/4 c. butter
  • 1 tsp. salt or to taste
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano (optional)

Directions

    Melt the 1/4 cup butter in a large saucepan.

    Add onion, celery, mushrooms and garlic.

    Cook 3 to 4 minutes over medium heat.

    Add zucchini, tomatoes, eggplant, salt and pepper.

    Cover and cook 15 to 20 minutes.

    Serve hot.
