- 2 medium onions, diced
- 4 ribs celery, diced
- 1 c. fresh mushrooms or 8 oz. can stems and pieces, drained
- 2 cloves garlic, diced
- 2 small zucchini, sliced 1/2-inch thick (unpeeled)
- 3 tomatoes, diced
- 1 small eggplant, peeled and diced
- 1/4 c. butter
- 1 tsp. salt or to taste
- 1/4 tsp. pepper
- 1/2 tsp. oregano (optional)
Directions

1Melt the 1/4 cup butter in a large saucepan.

2Add onion, celery, mushrooms and garlic.

3Cook 3 to 4 minutes over medium heat.

4Add zucchini, tomatoes, eggplant, salt and pepper.

5Cover and cook 15 to 20 minutes.

6Serve hot.
