- 1 1/2 c. peeled, diced eggplant
- 1/2 c. thinly sliced onion
- 1 clove minced garlic
- 3 Tbsp. olive oil
- 1 medium green pepper
- 1 1/2 c. sliced zucchini
- 1 (16 oz.) can stewed tomatoes
- 1 tsp. salt
- 1/4 tsp. Italian seasoning
- dash of pepper
Directions

1Place eggplant, onion, garlic and oil in 2-quart casserole. Cook in microwave 5 minutes.

2Cut green pepper into 1/2-inch strips.

3Layer pepper and zucchini over eggplant mixture.

4Add seasonings to tomatoes.

5Cook in microwave on 8 to 10 minutes. Let stand 5 minutes before serving.
