  • 1/2 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing, divided
  • 1/2 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cups each cut-up eggplant and zucchini (1/2-inch pieces)
  • 1/4 cup roasted red peppers, chopped
  • 1/4 cup oil-packed sun-dried tomatoes, drained, patted dry and finely chopped
  • 3 cloves garlic, minced
  • 1 can (19 fl oz/540 mL) chickpeas (garbanzo beans), rinsed
  • 1/2 cup Kraft 100% Parmesan Aged Grated Cheese
  • 3 pitted black olives

Directions

    Heat 1/4 cup dressing in large nonstick skillet on medium heat.

    Add onions; cook and stir 5 min.

    or until tender.

    Add eggplant and zucchini; cook and stir 8 min.

    or until softened.

    Add peppers, tomatoes and garlic; cook and stir 2 min.

    Spoon into food processor container.

    Add chickpeas, cheese and remaining dressing; process until almost smooth.
