- 3 Tbsp. olive oil
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced
- 1 medium eggplant, cut up
- 2 zucchini (1-inch slices)
- 1 can tomatoes, chopped
- 1 tsp. basil leaves
- 1/2 tsp. salt
Directions

1In a large frying pan over medium heat, combine oil, onion, pepper and garlic.

2Cook, stirring until limp.

3Add remaining ingredients and bring to a boil.

4Reduce heat, cover and simmer for about 35 minutes or until eggplant is very soft; stir occasionally.

5Uncover and boil rapidly about 20 minutes, stirring often, until most liquid evaporates.

6Salt and pepper to taste. Serve hot.

7Makes 4 to 6 servings.
