  • 6 large eggs
  • 6 cup flour
  • 1 1/4 cup water
  • 3/4 tsp salt
  • 1 2 lb container ricotta
  • 3 eggs
  • 1/2 cup grated romando cheese
  • 1 dried parsley

Directions

    Make a well with the flour and salt.

    Putt eggs and water in the middle.

    Mix gradually, starting from the inside of the well to the outside.

    Add flour if necessary so dough is not sticky.

    Cover with bowl and let rest for 1 hour.

    Roll out to about 1/8 inch thick, Cut into squares or circles.

    Filling, mix ricotta, eggs, romano cheese and parsley.

    Fill raviolis with 1 tsp filling, fork edges.

    Freeze or put into boiling water.

    When they float they are done.
