- 6 large eggs
- 6 cup flour
- 1 1/4 cup water
- 3/4 tsp salt
- 1 2 lb container ricotta
- 3 eggs
- 1/2 cup grated romando cheese
- 1 dried parsley
Directions

1Make a well with the flour and salt.

2Putt eggs and water in the middle.

3Mix gradually, starting from the inside of the well to the outside.

4Add flour if necessary so dough is not sticky.

5Cover with bowl and let rest for 1 hour.

6Roll out to about 1/8 inch thick, Cut into squares or circles.

7Filling, mix ricotta, eggs, romano cheese and parsley.

8Fill raviolis with 1 tsp filling, fork edges.

9Freeze or put into boiling water.

10When they float they are done.
