- 2 lb. potatoes (about 6)
- 2 Tbsp. shortening or vegetable oil
- 1 1/2 tsp. salt
- 1 large onion, sliced thin (optional)
- pepper
- 2 Tbsp. margarine or butter
Directions

1Cook potatoes in microwave for 10 to 12 minutes, then thinly slice them.

2Heat shortening in 10-inch skillet until melted. Layer 1/3 each of potatoes and onion in skillet; sprinkle with 1/2 teaspoon salt and dash of pepper.

3Repeat twice.

4Dot top layer with margarine.

5Cover and cook over medium heat for 20 minutes. Uncover and cook turning once until potatoes are brown.

6Makes 4 to 6 servings.
