Raw Scallops on Bacon

  • 4 slices of good bacon
  • 4 big scallops
  • 1/2 teaspoon lemon juice
  • salt and pepper (a pepper mix is nice).

Directions

    Cook 4 slices of good bacon until fully cooked, but not completely crisp; drain them on paper towels and cut each slice crosswise into 4 pieces.

    Quarter 4 big scallops and toss them with 1/2 teaspoon lemon juice, salt and pepper (a pepper mix is nice).

    Top each piece of bacon with a piece of scallop and serve with napkins.
