Raw Scallops on Bacon

- 4 slices of good bacon
- 4 big scallops
- 1/2 teaspoon lemon juice
- salt and pepper (a pepper mix is nice).
Directions

1Cook 4 slices of good bacon until fully cooked, but not completely crisp; drain them on paper towels and cut each slice crosswise into 4 pieces.

2Quarter 4 big scallops and toss them with 1/2 teaspoon lemon juice, salt and pepper (a pepper mix is nice).

3Top each piece of bacon with a piece of scallop and serve with napkins.
