- 3 c. whole bran cereal
- 1 c. boiling water
- 2 eggs, slightly beaten
- 2 c. buttermilk
- 1/2 c. salad oil
- 1 c. raisins or chopped dates
- 2 1/2 tsp. soda
- 1/2 tsp. salt
- 1 c. sugar
- 2 1/2 c. flour
Directions

1In a large bowl, mix bran cereal with boiling water; stir to moisten.

2Set aside until cool, then add eggs, buttermilk, oil and fruit; blend well.

3Stir together the dry ingredients and add. Spoon batter into greased 2 1/2-inch muffin cups, filling 2/3 full.

4Bake in 425° oven about 20 minutes or until done.

5Serve hot.

6Makes 2 to 2 1/2 dozen muffins.
