Ingredients

  • 2 Cups spelt flour
  • 2 Cups oat flour
  • 1 Cup whole wheat flour
  • 3/4 Cup corn meal
  • 3 tsp. yeast
  • 1 tsp. salt
  • 3/4 Cup hot water (135 degrees)
  • 1/4 Cup honey
  • 1/2 Cup plain yogurt
  • 8 Tbsp. butter
  • 2 eggs

Directions

    Combine first six ingredients in large mixing bowl. Mix briefly with dough hook if using a mixer; use wooden spoon if by hand.

    Gradually add the 3/4 cup hot water, the honey, yogurt, butter, and eggs.

    Mix well and place in an oiled bowl in a warm draft-free spot to rise for 45 minutes. Punch down, divide, form into two loaves and place in two oiled bread pans to rise for another 30-45 minutes. Meanwhile, preheat oven to 325 degrees.

    Bake for about 35 minutes. Cool in pans for 5-10 minutes, then tip onto wire racks to finish cooling.
