- 1 lb green beans
- 2 vitamins, c (500 milligram tablets)
- kosher salt
- 1 lemon
- 14 cup olive oil
- 2 teaspoons garlic, finely chopped
- 14 teaspoon red pepper flakes
Directions

1Remove wide strips of yellow zest from lemon with a veggie peeler.

2Place lemon strips, oil, garlic and red pepper flakes in hot saucepan.

3Cook over low heat until the oil simmers.

4Let it simmer 2 minutes.

5Remove from heat and cool for 30 minutes to 1 hour.

6Trim stem ends from the green beans.

7Pile them in a large bowl.
-
8Remove lemon zest from the oil.

9Crush vitamin C tablets to a powder.

10Add that powder and salt to the oil and mix well.

11Prepare the grill for direct cooking over medium heat (350-450).

12Preheat grill pan over direct to medium heat for about 10 minutes.

13Pour oil mixture over the green beans.

14Toss til well coated.
-
15Using tongs shake off excess oil and spread green beans on the grill pan in a single layer.

16Grill over direct medium heat with lid closed as much as possible until browned in spots and crisp-tender (5-7 minutes) turning occasionally.

17Remove from pan and season to taste with salt and freshly squeezed lemon juice.

18Serve Warm.
