- 1 c. chopped onion
- 1 medium carrot, chopped
- 1 clove garlic, minced
- 2 Tbsp. cooking oil
- 1 (16 oz.) can tomatoes, cut up
- 1 (16 oz.) can red beans, drained
- 1/4 c. snipped parsley
- 1 tsp. sugar
- 1 tsp. dried oregano, crushed
- 1 tsp. dried basil, crushed
- 1/2 tsp. salt
- 2 c. sliced mushrooms
- 1 beaten egg
- 1 1/2 c. Mozzarella cheese
- 1 1/2 c. cream-style cottage cheese, drained
- 6 lasagna noodles, cooked
Directions

1Cook onion, carrot and garlic in oil.

2Add undrained tomatoes, beans, parsley, sugar, oregano, basil and salt.

3Bring to boil. Cover and simmer 15 minutes.

4Add slightly mashed bean mixture with mushrooms and simmer uncovered for 15 minutes.

5Combine egg with half of the 3 cheeses.

6Spread 1/2 cup bean mixture in a 10 x 6 x 2-inch dish.

7Arrange two noodles atop.

8Spread with 1/3 cheese mixture, then with 1/3 bean mixture.

9Repeat layers twice. Bake covered in 375° oven 40 minutes.

10Top with remaining cheese and bake 5 minutes.
