Red Bean Lasagna

Ingredients

  • 1 c. chopped onion
  • 1 medium carrot, chopped
  • 1 clove garlic, minced
  • 2 Tbsp. cooking oil
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (16 oz.) can red beans, drained
  • 1/4 c. snipped parsley
  • 1 tsp. sugar
  • 1 tsp. dried oregano, crushed
  • 1 tsp. dried basil, crushed
  • 1/2 tsp. salt
  • 2 c. sliced mushrooms
  • 1 beaten egg
  • 1 1/2 c. Mozzarella cheese
  • 1 1/2 c. cream-style cottage cheese, drained
  • 6 lasagna noodles, cooked

Directions

    Cook onion, carrot and garlic in oil.

    Add undrained tomatoes, beans, parsley, sugar, oregano, basil and salt.

    Bring to boil. Cover and simmer 15 minutes.

    Add slightly mashed bean mixture with mushrooms and simmer uncovered for 15 minutes.

    Combine egg with half of the 3 cheeses.

    Spread 1/2 cup bean mixture in a 10 x 6 x 2-inch dish.

    Arrange two noodles atop.

    Spread with 1/3 cheese mixture, then with 1/3 bean mixture.

    Repeat layers twice. Bake covered in 375° oven 40 minutes.

    Top with remaining cheese and bake 5 minutes.
