- 1 lb. red beans
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 tsp. salt
- 2 bay leaves
- ham hocks and smoked sausage, cut up
- cayenne pepper to taste
Directions

1Wash and soak red beans. Drain. Saute all other ingredients. Cover beans with water in a large pot.

2Add other ingredients. Bring to a boil.

3Lower heat and simmer for 1 hour.

4Make sure that beans are tender.

5Serve over rice.
