- 2 teaspoons oil
- 1 medium onion, chopped
- 3 stalks celery, chopped
- 1 bell pepper, chopped
- 1 garlic clove, minced
- 1 tablespoon parsley
- 14 teaspoon cayenne pepper
- 1 teaspoon crushed red pepper flakes
- 1 lb red beans
- 1 beef bouillon cube
- 2 cups water
- 1 lb Polish sausage
Directions

1Soak beans over night.

2In a pressure cooker saute the onion, celery, bell pepper, and garlic in the oil until softened.

3Add the rest of the ingredients and bring the cooker up to pressure.

4Once the pressure valve is gently rocking, cook for 20 minutes.

5If not using a pressure cooker use 8 cups of water and simmer until beans or tender (around an hour).

6Then add sausage and simmer 15 minutes more.
