- 1 pound polish sausage, cut into 1-inch pieces
- 3/4 cup chopped onions
- 3/4 cup chopped celery
- 3/4 cup chopped green pepper
- 2 teaspoons minced garlic
- 3 tablespoons margarine (or butter)
- 3 15 ounce cans pinto beans
- 2 bay leaves
- 2 teaspoons Hungarian paprika
- 1 teaspoon dried whole thyme
- 1/2 teaspoon ground red pepper
- 1/2 teaspoon dried whole oregano
Directions

1Saut sausage, onions, celery, green pepper, & garlic in butter in a large skillet until tender.

2Stir beans into vegetables and add seasoning.

3Salt to taste.

4Simmer 30 - 40 minutes, remove bay leaves.

5Serve over rice.
