Ingredients

  • 1 pound polish sausage, cut into 1-inch pieces
  • 3/4 cup chopped onions
  • 3/4 cup chopped celery
  • 3/4 cup chopped green pepper
  • 2 teaspoons minced garlic
  • 3 tablespoons margarine (or butter)
  • 3 15 ounce cans pinto beans
  • 2 bay leaves
  • 2 teaspoons Hungarian paprika
  • 1 teaspoon dried whole thyme
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon dried whole oregano

Directions

    Saut sausage, onions, celery, green pepper, & garlic in butter in a large skillet until tender.

    Stir beans into vegetables and add seasoning.

    Salt to taste.

    Simmer 30 - 40 minutes, remove bay leaves.

    Serve over rice.
