- 2 lb. red beans
- 2 bell peppers
- 3 large onions
- 1 stalk celery
- Tabasco to taste
- Tony's seasoning to taste
- 1 lb. smoked sausage
- ham seasoning
Directions

1Wash beans and soak for 2 hours.

2(This it not really necessary.)

3Chop all vegetables.

4Smother onions, bell peppers, celery and ham seasoning in skillet with small amount of oil. Beans should be placed in large pot.

5Fill 3/4 with water.

6When water comes to a boil, add onions, celery, bell peppers and ham seasoning.

7Slice sausage very thin.

8Cook sausage in skillet. Throw the grease away and add sausage to the bean pot.

9Cover and cook on low flame for approximately 2 1/2 hours.

10Watch carefully and add water if needed.

11Serve on rice!!
