- 1 medium head red cabbage (about 2 lb.)
- 1 medium onion, sliced
- 2 large apples, pared and chopped
- 1 Tbsp. bacon drippings
- 1 tsp. salt
- 6 Tbsp. sugar
- 1 c. vinegar
- 1 1/2 c. water
- 1/4 tsp. ground allspice
- 1 bay leaf
- 2 whole cloves
- 6 peppercorns
Directions

1Quarter and core cabbage.

2Slice thinly to make 12 cups. Combine with onion and apple in large kettle.

3Add bacon drippings, salt, sugar, vinegar, water and allspice.

4Tie bay leaf, cloves and peppercorns in small pieces of cheesecloth.

5Add to cabbage.

6Cover and simmer 30 minutes.

7Uncover, simmer 1 hour longer.

8Remove spice bag.

9Serve hot.
