  • 1 medium head red cabbage (about 2 lb.)
  • 1 medium onion, sliced
  • 2 large apples, pared and chopped
  • 1 Tbsp. bacon drippings
  • 1 tsp. salt
  • 6 Tbsp. sugar
  • 1 c. vinegar
  • 1 1/2 c. water
  • 1/4 tsp. ground allspice
  • 1 bay leaf
  • 2 whole cloves
  • 6 peppercorns

Directions

    Quarter and core cabbage.

    Slice thinly to make 12 cups. Combine with onion and apple in large kettle.

    Add bacon drippings, salt, sugar, vinegar, water and allspice.

    Tie bay leaf, cloves and peppercorns in small pieces of cheesecloth.

    Add to cabbage.

    Cover and simmer 30 minutes.

    Uncover, simmer 1 hour longer.

    Remove spice bag.

    Serve hot.
