  • 2 lb. beef stew meat or chuck beef
  • 1/4 c. hot chili powder
  • 2 Tbsp. flour
  • 6 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 1/2 Tbsp. vegetable oil
  • 3 c. water
  • 1 tsp. salt
  • pepper to taste

Directions

    Brown cubed beef in vegetable oil thoroughly; add red chili powder and flour.

    Stir to a paste.

    Gradually stir in the water. Add onions and garlic.

    Simmer over low flame for 40 minutes. Stir in potatoes and cook 30 more minutes.

    For thinner stew, add more water. Serves 6.
